Dice the tempeh. Mix all marinade ingredients and add the tempeh. Let marinate for at least 15 minutes (the longer, the better; you can leave it overnight in the fridge!). Preheat the oven to 200°C (390°F). Place the tempeh on a baking sheet and bake for 10 minutes. Stir, then bake for another 10 minutes.
Combine all dressing ingredients in a jar and shake well. In a 1L jar, layer (in this order) the dressing, tempeh, carrot, cabbage, arugula, and seeds. Seal and refrigerate to enjoy a healthy lunch whenever needed.
